LIMA will open in Fitzrovia, London, this spring. Peruvian food and drink is listed as one of 2012′s top food trends (see Food Trends For 2012), and LIMA will serve a menu of traditional cuisine with a contemporary twist. Resembling a cevicheria, a casual restaurant where fish and shellfish are sold raw or cooked, the interiors are being designed by March & White, who redesigned The Arts Club in Mayfair, and designed Jamie’s Italian restaurant group.

CANNELE is the new cupcake. Dominique Ansel Bakery New York is getting rave reviews for this small French pastry with a soft and tender custard centre and a dark, thick caramelised crust. Made from egg, sugar, milk and flour flavoured with rum and vanilla, this is the new sweet treat.

JADE MOUNTAIN, St. Lucia, has announced its Food Festival Events for 2012. Cooking In Paradise will run from March 30 to April 2, giving guests the chance to experience locally grown Caribbean cuisine, while learning traditional cooking methods. Take a taste tour of Jade Mountain’s own organic garden, visit Soufriere’s local market, and learn to cook with Jade Mountain’s resident chef, Allen Susser. Cocktail party, lunches, gourmet dinner and Champagne brunch are also included. Other Food Festival Events include: Mango Madness, June 15 to 18; Spices of the Caribbean, September 7 to 10, and the Chocolate Festival, December 13 to 16.

Customers browse and select from a  menu via a row of touchscreens, pay on screen, and watch as their order progresses through the kitchen.
