Ali Rosen asks artisan chocolatier Paul Young to share his insider’s guide to where to eat, drink, and visit in London.
Paul Young has a reputation as an incredibly creative flavour alchemist, and is the only chocolatier in London working in a truly artisan way. Making all chocolates completely by hand, only fresh ingredients are used, without compounds, concentrates, essences, preservatives or additives .
The former head pastry chef for Marco Pierre White at Quo Vadis and Criterion, Paul was recently included in Channel 4 Food’s list of Most Influential Foodies under 40.
His book Adventures with Chocolate won the World’s Best Chocolate Book at the Gourmand Cookbook Awards in Paris, and was included in The Independent’s Top 50 Cookbooks.
At the European Semi Finals of the International Chocolate Awards, Paul A Young Chocolates won Gold Medals for Sea Salted Caramel and 85% Raw Ecuadorian Water Ganache, and three Silver Medals for Banoffee Pie Truffle, Raspberry Ganache, and 70% Ecuadorian Raw Chocolate Bar with Rose and Bergamot.
